Spiralized Puttanesca Recipe For Feminine Issues
Ingredients
- 1/4 cup olive oil, extra virgin
- 6 garlic cloves, minced
- 4 anchovy fillets
- 1 1/2 tsp dried oregano
- 3/4 tsp red pepper , crushed
- 2 cups chicken stalk, unsalted
- 6 cups sweet potatoes, spiralized
- 3 pints cherry or grape tomatoes, halved
- 2 tbsp tomato paste, unsalted
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 24 pitted kalamata olives, chopped
- 3 tbsp capers
- 1/8 tsp salt
Instructions
- Heat a large high-sided sauté pan over medium heat. Add oil to pan; swirl to coat. Add garlic, anchovies, oregano, and red pepper; cook 2 minutes, stirring constantly to break up anchovies. Add stock and bring to a boil. Stir in spiralized sweet potatoes, tomatoes, and tomato paste.
- Cook 2 to 3 minutes or until the sweet potatoes have slightly softened. Remove pan from heat; add remaining ingredients, tossing to combine.
